First Firsts.

Bonjour mon petit Macarons!

Hope you all have filled up on Hari Raya Goodies! I for one can't say that it's been a Happy Hari Raya until I've had my fill of pineapple tarts! yum!

As promised, I'll share with you some of my "firsts". My first Love and my first Baby.

My First Love.

I was initially very reluctant to start off anything because I knew how time consuming it would be and how it involved sleepless nights but when I was told I had no choice, I submitted my form to join the Malaysian Baking and Confectionery Challenge : Wedding Cake Class.

I loved this cake; baked it with care, caressed the fondant until it was smooth, did numerous amounts of testing before we settled on a design. Sleepless nights spent with My First Love are in retrospect the best nights I spent in the Pastry Kitchen.

I spent a lot of time with my First Love. Coming up with the concept and bringing it to realisation. I could rehash what I've said before but I think the words that flowed out of me originally before seems to be the most powerful. The entry was posted on my personal blog under the title "Enter The Dragon"

My First Baby

My First Baby was a labour of love. I was nervous as anything wondering not only how to make it, but how to make it beautifully. Spent overnight painting the gold details on the LV bag.

I carried it gingerly for fear it would break to pieces. Wrapped firmly in fondant and painted it with care. I felt so proud when I delivered it to the restaurant, as proud as any parent would be at it's child's recital!

This was my first baby, I put it out into the world and since then I havegrown and learnt a lot. I am still not done. I still have so much more to learn, many more challenges to rise to and many more pitfalls to climb out of but seeing as it has been 12 years since I started my craft, it is nice remembering first firsts.

Hello My little Cupcakes!

Last night, I went to a fantastic party called FREEDOM Merdeka Eve at Marketplace (Jalan Yap Kwan Seng here in KL) organised by Underground Soundz (UGS). This is also FREEDOM's 1st Birthday Party. They've been organising parties for a year now and to mark the occasion, I've been asked to bake and make the cake!

though this isn't the first time I've done it for FREEDOM (First time was the FREEDOM Christmas Eve Cake)

FREEDOM is a party for (but not restricted to) the pink crowd in KL who prefer harder beats on the dance floor and knowing what ups and downs UGS has faced through the past year, I knew exactly what kind of cake to make.

A big number 1 to represent the year (duh)
The UGS logo (oh lordie how am I gonna do this one justice)
The gay pride rainbow flag with the words FREEDOM emblazoned across it.
Oh and it's gotta have pink in it somewhere (or everywhere)
And lastly, it needed a phrase, a sentence. Something that will tie in everything succinctly. I'm not the best copywriter in town but I gave it the old college try.

At the same, I also came across a lovely pink ombre cake online which I had become obsessed with. It was a cake with gradations of pink buttercream piped in ombre style swirls. So it was a kinda perfect as finishing flourish to pretty-up the cake.

Making and baking this cake made me think of milestones. One can get misty-eyed when remembering things (good or bad). First firsts. Do you remember the day you got your first pay? Do you remember the first time you met the love of your life? Your first kiss?The first record you ever bought? Do you remember the time when you knew exactly what you were meant to do in life?

I will share with you two of my Firsts. My first Love and My first Baby. But that will be in the next post people!

Me, two years old and dying for cake.

Cake flavours are like fashion, they cycle in and out with new twists when it get rehashed and reborn.
I remember a time when I was young, 4-6years old and the cake flavour was Banana Walnut cake. It wasn't only because my mum, Beatrice, made it for all five of the kids birthdays and my Dad's birthday but it seemed that there were people who were coming around letting my mum taste their banana-walnut cake, like at a state-fair only with my mum as the judge.

She would say it's too sweet, or over-baked or too much walnuts and even go as far as commenting on how ripe the bananas were that were used in the cake. I grew up around my mum in the kitchen.

She also used to keep the liquor in a cabinet below the kitchen counter. It was a dark cabinet almost foreboding but I had my chances of nipping into the cabinet looking at all the different colours of liqueurs there. I'd look at their intense colour and smell their aromatic bouquets. I learned how to stay away from Pimms because it's just too bitter for a kid to actually enjoy. I did however enjoy sipping the peppermint liqueur. I felt so naughty and it tasted of toothpaste which to an 8-year old can taste delicious.

When Mum got a new recipe, it would be used over and over until you couldn't find any other ways to stretch it. I remembered the donut recipe. She got it from a women's magazine and jotted it down in her brown fake-leather bound recipe book which was actually an old converted yearly planner.

And then we were off eating plain donuts, sugared donuts, donut holes, plaited donuts, chocolate covered donuts, donuts topped with cream and sprinkled with chocolate rice and a single slice of sweet candied cherry. We were up to our noses in donuts and the house smelled of fried dough for a while. It was magical for me!

There was also the recipe for pau.... it was stretchy but light and fluffy. Char-siew pau, san-yuk pau, chicken curry pau, kaya pau, whatever-you-could-fill-in-a-pau pau. Yummy to eat and really fun to make, although mine always came out in a less-than-globular state and/or with holes where I didn't pinch the dough tightly shut.

So anyways, I was talking about flavours. These days, when people ask for my best cake, I usually give them the most popular flavour at the moment. These days it's red-velvet with cream cheese frosting, which some people don't get because of the unnecessary addition of alleged copious amounts of red colouring. I like with with less colouring. The addition of the baking soda and white vinegar mixture actually accentuates the earthy red hues in cocoa powder so not too much red is required (nor desired for some).

A cake that started a fad actually started when a friend, Mia, emailed me a picture of a rainbow cake and said, "Babe, you think you can do this cake?". Of course I said, "Sure!". And when it was done, it spread like wildfire. From out and proud GLBT friends to families with kiddies who love a good surprise when the cake is cut. And everyone gets really happy when they see Rainbows.

Like I always say, when things are getting negative and down,

"Sunshine and Rainbows, darling. Sunshine and Rainbows"

Then there's the lemon-coconut cake which is, if I may say, a flavour marriage baked in pastry heaven.The tartness of the lemon and the richness of the coconut coupled with the creaminess of the cream cheese filling always takes the cake (ok, bad pun).

Then there's my yummlicious chocolate, which is a Flourless chocolate almond cake. Very moreish. best eaten at room temperature with a dollop of cream and a good strong (unsweetened!) cup of coffee.

I've tried to start a fad for what I call new-flavours (read: old rehashed flavours) like Green Tea with Crytalised Ginger or Dark chocolate with black pepper or Chai-Latte cupcakes. Even as far as trying savoury type muffins. But people are sometimes too resistant to change especially when it comes to sweet stuff.

Memories are Sweet and Sweets make memories.

If it wasn't in your memories as a child growing up, chances are you won't enjoy crumbly shortbread because you didn't remember hugging a big pale-blue tin of melt-in-your-mouth shortbread. you'd just think it's a lesser cookie.

As for the cake specialist, I'm still trying to recapture my mum's Banana Walnut cake. My recipes never really get there. There's always something missing and I'll keep on rehashing this recipe until one day I can proudly say that yes this is Beatrice's Banana-Walnut cake.

I miss my Mum's banana-walnut cake. I miss you too Mum.

Introducing...Cocktail Cupcakes

Playing around with new flavours excite me to no end. This time round, for a late brunch (almost dinner) with some good friends MJ, Joanne and Christian...Joseph came a bit later. I made some alcohol flavoured cupcakes for them.

After watching Masterchef this morning, with their Challenge being Cupcakes, I made some of my own master creations *self applause*

Introducing the two latest flavour studs in the Cakery's stable!

The Irish Rosebud and the CrazyZestyCool.

The Irish Rosebud is a cupcake made with Bailey's Irish Cream, topped off with a two chocolate (milk and dark) ganache and decorated with a milk chocolate rosebud and Coffee Buttercream.

The CrazyZestyCool is a Vanilla Cupcake slathered with Absolut Tropics (a delicious tropical fruit-scented vodka I found in the Duty Free Shops at Jakarta's Soekarno-Hatta International Airport) and lemon syrup. Then topped off with a Zesty Lemon Buttercream and Toasted Hawaiian coconut flakes.

The alcohol gave the cupcakes an added moisture and gives the whole flavour combinations more depth of taste.So for all you alcoholical drinkers out there.. come and try my Cocktail Cupcakes!

I can imagine other delicious combinations! Rum Raisin Cupcakes are the norm.. think more along the lines of Mojito Cupcakes, Cosmopolitans maybe even a Guinness Cupcake!

Sabah Inspired Cupcakes

Mimi said she wanted some more cupcakes but wanted to explore a different flavour. So I suggested a classic one. Carrot Cake with Cream Cheese Frosting. With Walnuts and Raisins and made with Olive Oil, because I like how it smells when it's baking. Heaven!

When she said she wanted Sabah designs on it. I immediately thought of the Sompoton (a local wind instrument made out of a gourd).

Then of course Mt. Kinabalu popped into my head. Right after that was the Rafflesia.

The Siung (traditional headdress of the kadazan women) and the Gong came after that.

But what Sabahan get together would be complete without the Sosopon!

By the time, we've finished exchanging *rather fast* emails. I had my ideas down pat already.

Of course there are heaps more ideas coming from Sabah. (Such as Paddy fields, Bambangan (pickled mango-like fruit), Proboscis Monkeys and Orang Utans.) but I stuck with these and I hope you like them!

"Traditionally, the English Christmas Fruitcake is made the week after Christmas and is "fed" until the end of November.

On the first week of December, it is brushed with three thin layers of melted apricot jam and is covered with Almond Paste Icing.

That is left for a couple of days to dry out and then it is covered, yet, again with Royal Icing.

By Christmas, the Royal Icing should be hard."

Hmmmm, yumm. All that "feeding" of the fruitcake and slathering it with apricot glaze and covering with delicious marzipan and then a white blanket of sugar icing... has visions of sugarplums dancing in my head.

It's time for me to bake fruitcakes. I'm definitely late on the baking bit, but I'm still in time for the feeding of the fruitcake.

"To feed a fruitcake" means to brush it liberally with the liquor of choice in the soaking, making and baking of the fruitcake.

Traditionally Brandy is used. Although whiskey or a good dark rum are good substitutes as well, and in a pinch, a medium to heavy bodied red wine will do. The rule of thumb for me is, that if it is something that you would happily drink, then, by all means use it in your fruitcakes.

The same goes for chocolates used or wine used in cooking.

However if you are of the non-alcohol-drinking set, there is always spiced sugar syrups or fruit juices to be used in-lieu of alcohol.

Fruitcake always has a bad reputation for being over-sweet, too dry and hard enough to kill a medium sized dog. But I blame it on bad, store-bought monstrosities given by people whom have no clue of good quality.

Yes they are rich and sweet. But everything in moderation, please.
Have a small slice, not a big chunk.
Have it with unsweetened tea/coffee to take the suagr-rush edge off it all.

A well made fruitcake can be like eating a slice of Heaven.

Just you wait til you've tried my Gold Medal Winning, Caramel Fruitcake. You'll be a convert!!

Some baking tips for Fruitcakes:

Soak nuts and fruits you intend to use overnight in the liquor/fruit juice of your choice.
Always bake at a low temperature (160° C or lower) - I prefer to go as low as 130° C.
Keep a pan of water below the rack where the cake is baking
If the top is browning too fast, put a piece of aluminum foil on top of the cake to retard browning.
Replace a quantity of flour (up to 20%) with ground almond to keep the moisture, especially if you're not "feeding" your cake with alcohol.
Add 5-10% invert sugar (such as Trimoline or Glycerin) into your recipe to keep the cake moist so it has a longer shelf life
After the cake is baked, pour liberal amounts of liquor/fruit juice onto the hot cakes to ensure good flavour
Do not freeze fruitcakes before "feeding" them. Well fed fruitcakes however may be wrapped in muslin and aluminum foil and plastic wrap and kept in the freezer indefinitely.
To serve fruitcakes (esp if frozen) heat them up in microwave or a steamer and serve with Brandy sauce or Vanilla Bean Sauce.

So after a Hectic Birthday weekend of baking, I still had one more project to do.

Allen had ordered 300 cupcakes of different flavours (Vanilla, Chocolate and Sweetcorn). Some of them to be served to guests and some of them to be packed into little silver cake boxes as giveaways.

Pulled a final overnighter for the week and did a road trip ( Thanks Joseph! ) to deliver them to Allen and his waiting guests in Klang! Happy Birthday Allen!!

I like how colourful they look. Makes you feel happy just looking at it! Hope you like them too.

Mushroom on a Stick.

When Damon said he wanted a mushroom for his girlfriend's birthday. I thought I was in the back streets of Legian in Bali looking for the best priced magic mushroom. Alas no, it was a cake in the shape of a mushroom. A mushroom, sitting on a bit of wood. Sounds quite funny actually. So here's my interpretaton of the description given. It's been a while since I've blogged here. To tell you the truth, I've been feeling a little bit lost in coming to grips with my cake making enterprise. There are so many things to think about that that's all I've been doing.

With a new oven and mixer promised, in the works, it's now time for some action!...

I've decided to bake a series of cakes for the Cakery so I can refine and re-test my recipes and garnishings so that it has a sense of continuity and standards.

This is a rough sketch of what is to come for people so that they will have an idea of what kinds of cakes I make. The three main cake sections are

Classics -
Cakes which everyone knows and loves and hopefully love more because it's done by the Cakery

Delightfully Sinful-
Cakes which are over the top, delicious and unabashedly sinful for calorie counters.

Sturdy Staples.
These are more stable sturdy cakes most of which are from my regular repertoire when I make custom designed cakes. These cakes are more hardy and can stand up to modelling into various shapes and sizes.

The plan is to make the cakes, decorate, garnish and finish them nicely and invite somne lovely people to come have a taste and see how it can be improved upon.

As the saying goes, There's No Such Thing as a Free Lunch so I'm hoping to get feedback good and not so good on them in hopes of improving the variety and quality of the cakes.

I'm excited about this project!

It will take weeks and a few trial bake-runs to get it perfect!

Now off to the Lab to refine the recipes!.. ~cue maniacal laughter!

Elyssa's Birthday Cake -Part 1.

Malar ordered a cake for her son Vishunu's 13th Birthday. "Would I be a bad mother if I got him a fake PSP for his birthday?", said she. I'm always up for a challenge so this time I had to recreate a PSP as a birthday cake. Red with white buttons. He likes soccer too so I made a little soccer field complete with soccer ball for him. Also completed the set with 4 cupcakes with the iconic triangle, round, square and X buttons!

Ceritalah 3, The Book Launch

I was like a proud parent when I saw people taking pictures of the cake. ~smiles happily~ Thanks Aurelia for giving me the chance to make this cake. Deeply humbled and very grateful.

Rachel wanted to order a naked woman's torso for the Birthday boy who was having a Playboy Mansion Themed Birthday Party. I am particularly proud of the Pamela Anderson sized boobies.

If you lift up the "Eat Me" panties, you'll see her in all her glory! *i.e spent at least half an hour looking at medical journals online to get it done just right*

Also gave her a tattoo!

This one was a cake done for Aldia's friend Pete. According to her, there was some nipple grabbing action throughout the party. Naughty naughty!

When Apple asked me if I could do a camera shaped cake. The first thing I said was Of Course! I tried my best and I believe that I did justice to the Nikon D60. I'm glad everyone loved it!

Fresh off the Triumph of doing the Nikon D60 camera, I received an email from Anis asking if I could do a film camera... boy was I on a roll!

Anis wanted a special and different Wedding Hantaran for her husband to be, so she asked if I could do a Video Camera. We met up and decided to go with doing a RED film camera. I was particularly proud of this work. It took me about 4 hours to get everything just right. Thanks Anis for giving me the chance to do this challenge!

LV Bag - Revisited.

This Cake was done for Kalpana for her Princess' 4th Birthday. The Cinderella was handpainted by yours truly and the cake was finished off with the lightest of pinks and a gold tiara, necklace and septre.

This cake was done for Syed's twin daughters birthday. Choc sponge with layers of vanilla buttercreme. They wanted a Hannah Montana Theme.

So Andy called me up and asked for a cake for one of his clients and he said he wants a simple but nice cake. So I suggested a Flourless choc cake! Very more-ish and came out stylinsh and elegant too.

Flavour : Flourless Choc cake
Design: White piping with gold dragees and gold dust.

Wei Yin also requested a cake for her mom's 50th Birthday. Her whole family's got the travel bug so what better cake to make than a luggage travel bag. Complete with sunglasses, a passport and "stickers" on the luggage that says I heart Mom and #1 Mom! Hope your neighbours loved the Marble buttercake too Wei Yin!!

Kelly wasn't really sure what to order for Yan's birthday cake. Maybe Tiramisu, Maybe cheesecake. So seeing as they're high fashion girls, I suggested to Joseph that I'd make a mni LV bag cake for them. Size? Extra Small to keep their trim waistlines and small appetites. So I did it! Velvety chocolate cheesecake with an oreo crust and covered in fresh cream accented with gold dragees and piped chocolate leaves.

"They all loved the cake!"

I'm always afraid they'll hate it. heheheheh don't call it low self esteem, just call it a yearning for my cake eaters to be satiated!

Jihan-Paris-Butterflies

So I met Jihan, a friend of Jansen *the brother of the girl I made the Louis Vuitton Bag cake* ... wow talk about six degrees of separation... hahaha.

Jihan wanted to celebrate her birthday with a special cake. And she had butterflies and Paris in mind.

"and a white picket fence around it", said Jansen.

The top tier is a butterscotch cream cake and the bottom tier is a moist chocolate cake with fresh strawberries.

The cake is a pastel green accented with gold mini butterflies, pink and white sugar butterflies, and cute flowers in pastel colours.

The Eiffel Tower is made with solid chocolate piped with Jihan's name on it.

I hope you all like it!

but more importantly I hope Jihan loves it.

Congratulations to Ern Nie and Adeline on your beautiful wedding day!

Adeline met up with Joseph, Jayme and I a few months back to decide what cake she would like for her wedding. I like Adeline. She's no nonsense, straight forward and wonderful personality so I was pleased to make her wedding cake.

Although I had to squeeze it in between work and the cake, I finally made it, sent the cake to the Life Chapel and also made it to the dinner at PJ Hilton after work last saturday.

This 12kg cake is decorated with pink ribbons with a snow white cover of icing. The cake is a moist lemony almond butter cake. I hear the Mother of the Bride loved it too! So I'm a happy boi. I always love it when people love my cakes. LOL

Did this for Anne's Mom. Sweet roses for a sweet ol lady who's turning 70. Flavour : Lemon Butter

OK I didn't do this one but it's so pweeeeeeety that i had to put it in.

This one was done at work for a customer. Sweet flowers in pastel brushed with pearl powder to make it irridescent and highlighted with pastel butterflies. Flavour : Chocolate Fudge

This one was done just today. A Rich chocolate fudge cake with bittersweet chocolate ganache garnished with small red hearts.

Met Chef Emmanuel Stroobant!!!! To those not in the know he's the Chef in Black on the Asian Food Channel ( Channel 703 on Astro). He worked here in Shangri-La KL for a food demo for California Raisins. He is left handed like me too!!! hahahah and he is hillarious, charming, funny as well as oh so pleasing to the eyes. I got a pic with him and his Pastry Chef who is actually the quiet cute one as well. Yummy. Worked with him for three days and it was the best 3 days of my entire working career! and I've got the autograph to prove it too! I'm a happy boy! YAY!!

I've been promoted to Chef De Partie position at the Pastry Kitchen. MUAHAHAHAHA I've got more power!!! You know what they say, Power Corrupts and Absolute Power Corrupts Absolutely. Ah I shall not forget the little people who I've stepped on to get to this level. hahaha! Kidding! I've been waiting for for ages. I thank God for this blessing.

Joseph finally made his exit from Times Square and for the benefit of his now ex-workmates, and some plugging for my business, he decided to give them cupcakes.

Chocolate chunk cupcakes. With the name of each of his workmates inscribed in green, his favourite colour, on top of the cupcakes topped off with a little flag with the message " So Long, farewell....I need to say Goodbye!!!"

I've made them all sweet and white on top with green and pink pastel swirls but their exterior belies their rich dark interior. Hope you like them. Good luck in your new job Joseph!!

Lola sms'd me about a cake for her beloved hubby Jamie. Something light said she, something heart shaped. So I sent her this picture which was originally done for a Valentine's Day cake at work.

She liked it and so it was decided that we'd do a vanilla butter cake for Jamie. It turned out like this. Not quite the same but you get the same feeling. hahaha! So Happy 30th Birthday Jamie and more to come, who knows what kind of cake he'll order for you for your next birthday Lola!

I've never met Anne but she came across this blog and requested a cake to be delivered to her Darling Husband for his birthday.

She chose a 1.5kg flourless chocolate cake. We had a few conversations in between us *all through email and sms* cause I'm so busy i don't pick calls up during work hours. sorry Anne! ;-)

So the cake was made, put in a box, delivered and much to her hubby's surprise too! He loved it especially the card! Anne darling, you know how choose sentiments!

So after trawling through www.louisvuitton.com we decided to do a twist on the Speedy30 model so instead of it being white with multicoloure LV print, we decided to give it the classic LV look, brown leather with gold embossing.

This is the cake.

Moist chocolate cake with layers of strawberries and fresh cream accented with our version of the ever-so-stylish Speedy30 by LV. With a gold sugar plaque and a gold key to mark her freedom!

After two months of tireless preparations, two major changes to our setup and countless of hours changing and refining our menu, Shangrila Kuala Lumpur's entry for Class 23 : International Gourmet Team Challenge for Culinaire Malaysia 2007 won the Gold Medal! We beat out 8 other hotel entries to be the best. We had reservations, we had our doubts, but we stayed true to our standards of taste and straight forward menu. So it all paid off! Joseph called from work to ask whether I'd like to make a cake for McDonald's 25th Anniversary in Malaysia. Of course I would, and this would be a GREAT PLATFORM to show my skills and get noticed, sadly, we didn't get any free Big Macs or Chicken McDeluxes. We did however come up with a McCake.

Of Lemons and... yellow cakes?

L'eau d'Hadrian had their 25th Anniversary and Lauren, one of Colin's ex-workmate was nice enough to suggest that we do the cake for them.

Pictured here is a replica of the L'eau d'Hadrian limited edition perfume bottle in which the scent has accents of lemons and honey in it.

So we made the cake with Lemon Butter flavour.

Just like the bottle, the artwork was hand-painted; painstakingly by Colin and the gold butterfly stopper was made by yours truly.

This yellow, chocolate butter cake was made for a workmate of mine who's cousin is getting married over the weekend.

This "hantaran" cake was made with yellow, cream and gold as its theme

My niece Elyssa celebrated her birthday a couple of months ago, and her mom Joyce wanted me to make two cakes for her, one for at school to hopefully score with the other soccer moms and one for the house after her afternoon nap. We had princessess in mind so we decorated the place with disney princess flags and pink baloons and barbie princess tiaras for everyone.

Here's a Happy Birthday Wish for Nana and Joseph. Both of whom share the same birthdate, albeit 16 years apart. Hope you guys like the cakes.

Being a fan of Nickelodeon's Hannah Montana, I decided to make a twist on it. Nana's cake was a moist carrot cake with cream cheese topping, less sweet according to the little Miss, oh boy she's gonna be a model yet! Anyone wants to photograph a really photogenic and cute 10y/o girl for a modelling contract? :-)

Joseph's cake was considerably more..uhm.. adult. His was a rich chocolate fudge cake. Actually done by my friend Colin because I had to distract Joseph from the fact that we were having a surprise party for him.

Happy 10th and 26th Birthday to two people whom I hold dear in my heart.
